Macadamia Nuts - Byron Bay, Australia

Natural, whole pieces. Sweet, oily in texture, crunchy, buttery - this special nut was discovered in Australia in the late 1800s and popularized in Hawaii in the 1970s. An excellent addition to salads, stews, rice dishes, and desserts, macadamias pair especially well with coconut, chocolate and fish. Best when toasted, cooled and then chopped or ground.

Macadamia pesto, a quick recipe: 1 cup fresh basil, 50 g macadamia nuts, 100 ml macadamia nut oil, 2 cloves garlic, 1/2 tsp. ground pepper, 1 tablespoon balsamic vinegar

Roughly grind all ingredients in a food processor to a nice paste. Use on pasta, in soups, on meats.

Pine nuts, organic - Lazio, Italy

From a leading Italian family producer, our Lazio-based, sea breeze-kissed pine cones are harvested from November to May when the pine cones are still closed. Following the simple traditions of generations, our partners lay the cones under a baking summer Roman sun to open, after which they mill cones to extract the pine nut pods, which they then shell, dry and select to remove any impurities such as yellow shells or irregular sizes. Light nutty flavor, crisp yet creamy texture, hints of pine sap, never bitter.

Hazel nuts - Piedmont / Avellino / Lazio - Italy, Trebizond, Turkey

Blanched. Different kinds of hazel nuts exist in both countries, all are highly prized. The Italians are well-known for the DOP Piemontese "sweet Langhe rounds," which have a very subtle flavor and wonderfully toasted aroma. The southern DOP Giffoni hazelnuts of Avellino peel easily and withstand high temperatures making them ideal for baking; and the Lazio "Roman hazelnut" of Viterbo, softer and ideal for biscotti. The Turks grow two high quality hazel nuts, the Ordu Levant and the larger Giresun, both cultivated near and around the northern cities of the Turkish Black Sea coast.

Marcona Almonds - Alicante, Spain

Shelled, whole. The "Queen of Almonds," found only in the Murcia region of Valencia, marcona almonds are considered among the best in the world. Shorter, rounder, softer, and sweeter than the California variety. The Mediterranean climate gives this large, round nut a uniquely sweet and slightly bitter taste. The best almond for cakes, sauces, and snacking (roasted and salted).

Pistachios - Kermann, Iran

Lightly salted. Technically seeds, the best pistachios are said to come from Iran. Delicate, nutty taste. Very good source of protein, high nutrient-energy, with high levels of potassium, calcium and phosphorous

Pecan nuts - Louisiana, USA

Blanched. The highly valued pecan is the only indigenous North American nut species and served as an important food source for the Algonquin and other Native American tribes. New Orleans, due to logistic advantages of the Mississippi River and developments in pecan tree cultivation, has been the central market and distribution point for pecans since colonial times. The high oil content and sweet taste makes the pecan excellent for desserts (such as in well-known pecan pies and cookies) but they are also exciting in salads, as fillings, for coating fried chicken or fish. Of course, wonderful on their own - whole, roasted and salted or coated in chocolate.

Walnuts, Chandler halves - California, USA

Shelled halves. Developed at University of California at Davis and prized worldwide for their larger, extra light, high quality kernels. Elegant color, crunches easily in the mouth, light walnut flavor.
